Whole-Wheat Buttermilk Pancakes

For about 5 pancakes
Whole Wheat Flour | 1.5 cups (225g) |
Baking Powder | 1 tbsp |
Vegan Butter sub: regular oil | 2 tbsp (27g) |
Soy Milk | 1 cup |
Apple Cider Vinegar | 1.5 tbsp |
Sweetner Jaggery/Brown Sugar/Maple Syrup | 2 tbsp |
Powdered Flax Seed | 1 tbsp |
Vanilla Extract | 1 - 2 tsp |
Water | ??? |
Process

Prepare the Buttermilk
Mix soy milk and ACV and let stand for 5 - 10 minutes

Prepare flax egg
Boil 3 tbsp water and mix with powdered flax seeds, and let stand for 5 - 10 minutes

Mix, but do not overmix
Mix everything together into a thick batter, adding water as necessary
There should not be any dry clumps, but it is okay to be lumpy
You do not want an overly uniform or thin/runny mixture

Notes
Cast Iron or Carbon Steel pans are excellent for making pancakes with minimal oil every 3 - 4 rounds. If possible, avoid using non-stick pans. In fact, just don't use non-stick any more.
I have never managed to fend off predators for long enough to make a stack but I hear that's a great way to eat them - A tower with a dollop of Butter and some jaggery / Maple syrup.
