Whole-Wheat Buttermilk Pancakes

Ingredients

For about 5 pancakes

Whole Wheat Flour1.5 cups (225g)
Baking Powder1 tbsp
Vegan Butter
sub: regular oil
2 tbsp (27g)
Soy Milk1 cup
Apple Cider Vinegar1.5 tbsp
Sweetner
Jaggery/Brown Sugar/Maple Syrup
2 tbsp
Powdered Flax Seed1 tbsp
Vanilla Extract1 - 2 tsp
Water???

Process

  1. Prepare the Buttermilk

    Mix soy milk and ACV and let stand for 5 - 10 minutes

  2. Prepare flax egg

    Boil 3 tbsp water and mix with powdered flax seeds, and let stand for 5 - 10 minutes

  3. Mix, but do not overmix

    Mix everything together into a thick batter, adding water as necessary

    There should not be any dry clumps, but it is okay to be lumpy

    You do not want an overly uniform or thin/runny mixture

  4. Profit

    Cook and eat the pancakes 12

Cast Iron or Carbon Steel pans are excellent for making pancakes with minimal oil every 3 - 4 rounds. If possible, avoid using non-stick pans. In fact, just don't use non-stick any more.

I have never managed to fend off predators for long enough to make a stack but I hear that's a great way to eat them - A tower with a dollop of Butter and some jaggery / Maple syrup.
