Mozzarella Cheese

Ingredients

For 1 (400g) log

Cashews Soaked Overnight1 cup (125g) pre-soaking
Soy Milk1/2 cup (120g)
Lime Juice2 tbsp (30g)
Coconut Oil2 tbsp (27g)
Or up to 1 tbsp Sesame/Olive Oil
Tapioca Flour3 tbsp (22.5g)
Salt1 tsp

Process

  1. Blend

    Start with only cashews and 1/2 of the soy milk to form a thick paste, then add everything else

  2. Cook1

    Cook the blended mixture in a non-stick pan on low-medium heat for 10 - 15 minutes.

    Stir continuously to make sure it does not stick to the bottom

    You are done when the mixture turns stops flowing and becomes spongy/stretchy.

  3. Shape and store

    Transfer the cooked cheese onto wax/parchment paper and shape into a log.2

    Allow the cheese to cool outside before moving to the fridge.

Notes

You can skip the cooking part if you want to use this cheese in something that will be cooked, like pizza, lasagne, etc.

It is a good idea to prepare the parchment paper before/during cooking so that you can remove the cooked cheese as soon as it is ready.
